Simplest Eggplant Curry (Tomato free)
Ingredients
- 1 medium to large eggplant (diced 3/4 in cubes)
- 5 cloves garlic (minced)
- cilantro to top
Spices
- 1/4 tsp cumin seeds
- 1/4 tsp red chili pepper
- 1 1/2 tsp coriander powder
- 1 tsp curry powder
- 1/4 tsp turmeric powder
- 1/4 tsp salt
- pinch of hing
- 1/2 tsp mango powder
Steps
- add spices to a bowl (other than cumin seeds) of water (1/2 cup water)
- heat up pan and add cumin seeds and dry roast for about 30 seconds
- add garlic and a small amount of water and water saute for another minute on a slow flame
- add water and spice mixture and cook down for 1 or 2 minutes (add more water as needed)
- add eggplant and cook for a minute while mixing
- cover pan and continue to cook down for 1 minute
- add 1/2 cup water, cover and cook for 5 to 6 more minutes
- top with cilantro
Notes
- potatoes go great with eggplant. If you want to add boiled potatoes when you add the eggplant that will be good
- adding a little lemon juice at the end would be amazing
