Palak Matar (spinach and peas curry)

Ingredients


  • 4 tomatoes
  • 2 onions
  • 500g spinach (boiled)
  • 1 green chili
  • 7 cloves of garlic
  • small knob of ginger (optional)
  • 1 cup peas

Spices


  • 1/4 tsp Turmeric powder
  • 1 tsp Coriander powder
  • 1/2 tsp Curry powder
  • 1/4 tsp Salt
  • 1/4 tsp Red chili powder
  • 1/4 tsp cumin seeds
  • 1/4 tsp hing

Steps


  1. boil tomatoes and onions
  2. grind spinach and green chili in blender
  3. grind the boiled tomatoes and onions in blender
  4. heat up a pan, and dry roast the cumin seeds
  5. add garlic and a little water to water saute the garlic less than a minute
  6. add tomato and onion paste and lower the heat
  7. add spices, mix and cook for 3 to 4 minutes
  8. add spinach and mix thoroughly, add water if it's too thick cook for a minute
  9. add boiled peas (or potatoes, tofu, etc)
  10. bring it up to a boil, and then drop it back down to a simmer for 4 or 5 minutes
