Aloo Makhana (potato and fox nuts) (Navratri Vrat Recipe)
Ingredients
- 1/2 pound of potatoes (baby potatoes used in the video, or you can slice large potatoes)
- 5 tomatoes (boiled and blended into a paste)
- 7 or 8 cashews blended with water to make a cream
- 1 cup (heaping) fox nuts
- cilantro to top
Spices
- 1/2 tsp cumin powder
- 1/2 tsp red chili powder (low spice chili powder)
- 1/4 tsp cumin seeds
- 1/4 tsp rock salt
- 1/2 tsp mango powder
Steps
- dry roast cumin seeds until they start to pop or turn brown
- add tomato paste (and turn down the heat)
- add remaining spices and cook down for 1 minutes
- add fox nuts, mix in, and continue cooking for 6 more minutes (until fox nuts become soft)
- add potatoes and continue cooking it down for 6 more minutes, add water if you want a thinner consistency
- add cashew paste cook for 4 more minutes
- add cilantro (you don't need too much)

Notes / tips
- if you want it more spicy, add some ginger and green chili and grind into a paste and add it before you add the tomato paste
- you can add a little jaggery to add a sweet flavor
I've always wanted a recipe to try with lotus seeds. I will try this soon!
