Aloo Makhana (potato and fox nuts) (Navratri Vrat Recipe)

Ingredients

  • 1/2 pound of potatoes (baby potatoes used in the video, or you can slice large potatoes)
  • 5 tomatoes (boiled and blended into a paste)
  • 7 or 8 cashews blended with water to make a cream
  • 1 cup (heaping) fox nuts
  • cilantro to top

Spices

  • 1/2 tsp cumin powder
  • 1/2 tsp red chili powder (low spice chili powder)
  • 1/4 tsp cumin seeds
  • 1/4 tsp rock salt
  • 1/2 tsp mango powder

Steps

  1. dry roast cumin seeds until they start to pop or turn brown
  2. add tomato paste (and turn down the heat)
  3. add remaining spices and cook down for 1 minutes
  4. add fox nuts, mix in, and continue cooking for 6 more minutes (until fox nuts become soft)
  5. add potatoes and continue cooking it down for 6 more minutes, add water if you want a thinner consistency
  6. add cashew paste cook for 4 more minutes
  7. add cilantro (you don't need too much)

Notes / tips

  • if you want it more spicy, add some ginger and green chili and grind into a paste and add it before you add the tomato paste
  • you can add a little jaggery to add a sweet flavor
