Ingredients
- 4 potatoes (diced)
- 3 carrots (diced)
- 1 cup fresh peas
- 4 small onions (about 1 medium sized onion in the states)
- 6 garlic cloves minced
- 2 chilies minced
- 1 tbsp minced ginger
Whole Spices
- 2 black cardamom
- 5 black pepper corn
- 2 cloves
- 4 small tomatoes diced
- 1/4 tsp cumin seeds
Spices
- 1/4 tsp red chili powder
- 1/2 tsp turmeric
- 2 tsp curry
- 2 tsp coriander
- 1/2 tsp salt
- 1.5 cup of rice
Steps
- add black peppercorn, cloves, black cardamom, cumin seeds - allow to cook a little and toast the cumin seeds
- add onions, and water fry for a 2 to 3 minutes
- add ginger, garlic, and chilies and continue to water fry
- add spices, and continue to water fry for another 2 or 3 minutes
- add peas, carrots, and potatoes and water fry for 2 or 3 minutes
- add the rice, and 5 cups of water and pressure cook (In an instant pot it should be for about 4 minutes on high pressure)
NOTE - the pressure cooking here will be different in the instant pot vs the pressure cooker used in the video. The exact time will need to be figured out, we’ve estimated about 4 minutes because that’s how long rice is normally cooked. If you find the exact time please comment on the video to help others.
