Ingredients
- 4 tomatoes (diced)
- 1/2 green chili (minced)
- 2 garlic cloves (minced)
- 1 tsp jaggery (optional for sweetness)
- cilantro to top
Spices
- 1/2 tsp salt
- 1/4 tsp cumin
- 1/4 tsp turmeric
- 1/2 tsp coriander
- 1/2 tsp curry
- 1/3 tsp mango powder (a little less than 1/2 tsp)
- small pinch hing (optional)
- 1/4 tsp red chili powder
Steps
- heat pan on medium high heat
- dry roast cumin seeds
- turn down heat (to medium) and add tomatoes cook for a minute
- add spices, stir and continue to cook (you can raise to high flame but stir regularly) for 2 minutes
- add minced garlic and chili
- add a little water, and press the tomatoes as you mix to break them down (4 minutes)
- add the jaggery and mix and continue to cook for a couple minutes
- top with cilantro, quick mix and turn off stove
