South Indian Dosa with Potato filling


Potato Filling Ingredients


  • 3 potatoes (already cooked, skinned, mash them a bit)
  • small piece ginger
  • 5 cloves garlic
  • 1 green chili
  • 1/4 cup peas (already boiled)
  • 2 small onions chopped
  • 2 small tomatoes chopped
  • cilantro chopped

Spices


  • 1/2 tsp salt
  • 1/4 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp curry powder
  • 1/4 tsp red chili powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp mango powder

Steps to make potato filling


  1. toast cumin seeds
  2. add onions, with a little water to water sauté onions for 2-3 minutes until they brown a bit and start to get translucent
  3. add ginger, garlic, and chilis and cook for another minute or less
  4. add tomatoes and spices and a little water and cook it all down to a paste (2-3 minutes maybe longer)
  5. add mashed potatoes and boiled peas, cook for another minute or 2 (add a little water if needed)
  6. add the chopped cilantro

Steps to make Dosa with filling


  1. spread dosa batter onto a warm pan, spread it out like a pancake (you want a non stick pan here)
  2. once the dosa is cooked carefully start unsticking it from the pan
  3. add potato filling, and roll it.  You can continue cooking it a little more to make it into a rolled dosa.

Eat with green sauce and enjoy
