Simple yellow lentil curry (Moong Dal)

Ingredients


  • 1/2 cup yellow (moong) lentils
  • 4 cups of water
  • 2 tomatoes
  • 5 or 6 small garlic cloves (minced)

Spices


  • 1/4 tsp mango powder (to be added with lentils)
  • 1 tsp coriander
  • 1 tsp curry
  • pinch hing
  • 1/4 tsp turmeric powder
  • 1/4 tsp red chili powder
  • 1/4 tsp cumin seeds

Steps


  1. boil lentils with 4 cups of water and 1/4 tsp mango powder
  2. Make a tomato gravy
    1. blend tomatoes
    2. dry roast cumin seeds until they start to pop
    3. add tomato paste, stir it around
    4. add spices, and cook down until it’s a thick paste (like canned tomato paste)
  3. add lentils (with the water), mix it up and cook it down for a few minutes (you can add a touch of water to get it to whatever consistency you want)
  4. add chopped cilantro
