Ingredients
- 1/2 cup yellow (moong) lentils
- 4 cups of water
- 2 tomatoes
- 5 or 6 small garlic cloves (minced)
Spices
- 1/4 tsp mango powder (to be added with lentils)
- 1 tsp coriander
- 1 tsp curry
- pinch hing
- 1/4 tsp turmeric powder
- 1/4 tsp red chili powder
- 1/4 tsp cumin seeds
Steps
- boil lentils with 4 cups of water and 1/4 tsp mango powder
- Make a tomato gravy
- blend tomatoes
- dry roast cumin seeds until they start to pop
- add tomato paste, stir it around
- add spices, and cook down until it’s a thick paste (like canned tomato paste)
- add lentils (with the water), mix it up and cook it down for a few minutes (you can add a touch of water to get it to whatever consistency you want)
- add chopped cilantro
