Sambhar Curry

Ingredients to be pressure cooked


  • 2 tsp Sambhar Masala spice pack
  • tamarind (boil in some water)
  • 1/2 cup toor dal
  • 1 cup cauliflower (cubed)
  • 1/2 cup green beans (sliced)
  • 1/4 cup pumpkin (diced)
  • 2 carrots (diced)
  • 1 small eggplant (diced)
  • 2 tomatoes (diced)
  • 2-3 cups of water
  • 1/2 tsp salt
  • 1/2 tsp turmeric powder

Ingredients added later:


  • 1/4 tsp mustard seeds
  • 2 or 3 cloves of garlic (minced)
  • 1 cup of tamarind water
  • 2 pieces of jaggery

Steps


  1. add everything  to pressure cooker, mix well, and pressure cook (about 20 minutes)
  2. toast mustard seeds in pan
  3. add minced garlic for 20-30 seconds
  4. add tamarind water, jaggery, and the ingredients from the pressure cooker and mix well
  5. boil for 4-5 minutes

enjoy (try with some idli from your dosa)
