Ingredients
- 1 cup Chickpea flour
- 1 cup Whole Wheat Flour
- 2 tbsp chopped cilantro
- 1 chopped onion
- 3 garlic cloves minced
- 1 green chili minced
- water (enough to make the dough) about 3/4 cup or less - add it slowly - 2 tbsp at a time
- 1 tsp dried fenugreek leaves (optional)
Spices
- 1/2 tsp salt
- 1/4 tsp red chili powder (optional for some heat)
- small pinch hing
- 1/4 tsp turmeric powder
- 1/2 tsp coriander powder
- 1/2 tsp mango powder (optional gives it a nice tangy taste)
Steps
- mix the ingredients in a bowl (without the water)
- start to add the water a small amount at a time and mix it completely in. It will start to form a dough
- continue mixing, pressing it with your fist to flatten, and then bringing it back into a bowl. This kneading is important to get the roti right. It should still be a little sticky
- Take a golfball sized piece of the dough, apply flour to the outside and flatten it out with a rolling pin. Because it’s sticky you need the flour on the outside so that it doesn’t stick
- When it’s flat, start to cook on a pan and start the next roti
- When it starts to brown on the bottom flip it over and cook the other side
Enjoy with curry, green sauce, etc.
