Radish and Potato Curry


Ingredients

  • 1 Daikon radish  (use several small ones) (peeled and diced)
  • 1 medium sized potato (diced)
  • 4 small tomatoes (diced)
  • 1 green chili

Spices

  • 1 tsp coriander powder
  • 1/2 tsp salt
  • 1/4 tsp turmeric powder
  • 1/4 tsp mango powder
  • pinch of hing

Steps

  1. heat up pressure cooker and add tomatoes, spices, and green chili
  2. water sauté the tomatoes and spices for 3-4 minutes
  3. add potatoes, radish, and 1/2 cup of water
  4. pressure cook for 5 minutes and allow to pressure release for 10 minutes
  5. mash the potatoes and radishes a little bit (leave plenty of chunks)
Enjoy

Note - you should have about as much radish as you have potatoes in about the same chopped size.  If you’re using red radishes just keep that in mind
