Onion potato dry curry

Ingredients


  • 2 onions (chopped)
  • 1 green chili
  • 2 boiled potatoes (diced)
  • 4 garlic cloves
  • cilantro to top

Spices


  • 1/2 cup water (to make a spice slurry)
  • 1/2 tsp salt
  • 1/2 tsp cumin powder
  • 1.5 tsp coriander powder
  • 1/2 tsp curry powder
  • 1/4 tsp red chili powder

Spices (the ones that don't go in the water)


  • 1 tsp Anardana Powder (Pomegranate powder) [Amazon]
  • 1/4 tsp cumin seeds

Steps


  1. add spices to a cup of water and mix
  2. heat up a pan and dry roast cumin seeds
  3. add onions and a little water and water saute for 4 or 5 minutes
  4. add spice slurry and cook for another 2 or 3 minutes (turn down to a slower flame)
  5. add anardana powder once most of the water is cooked off cook for 30-45 seconds
  6. add garlic and green chili and cook for a minute
  7. add potatoes and about 1/2 cup of water (enough to make it a little soupy)
  8. cover and cook for 4 or 5 minutes, stiring occasionally, most of the water should evaporate
  9. top with cilantro
