Ingredients
- 2 onions (chopped)
- 1 green chili
- 2 boiled potatoes (diced)
- 4 garlic cloves
- cilantro to top
Spices
- 1/2 cup water (to make a spice slurry)
- 1/2 tsp salt
- 1/2 tsp cumin powder
- 1.5 tsp coriander powder
- 1/2 tsp curry powder
- 1/4 tsp red chili powder
Spices (the ones that don't go in the water)
- 1 tsp Anardana Powder (Pomegranate powder) [Amazon]
- 1/4 tsp cumin seeds
Steps
- add spices to a cup of water and mix
- heat up a pan and dry roast cumin seeds
- add onions and a little water and water saute for 4 or 5 minutes
- add spice slurry and cook for another 2 or 3 minutes (turn down to a slower flame)
- add anardana powder once most of the water is cooked off cook for 30-45 seconds
- add garlic and green chili and cook for a minute
- add potatoes and about 1/2 cup of water (enough to make it a little soupy)
- cover and cook for 4 or 5 minutes, stiring occasionally, most of the water should evaporate
- top with cilantro
