Okra (Bhindi) Masala Curry


Air Fried Okra Ingredients:


  • 250g fresh okra
  • Juice from lemon
  • 1/8 tsp Black pepper (to taste)
  • 1/2 tsp Salt (to taste)
  • 1/4 tsp Garlic herb (to taste)

Curry Ingredients:


  • Fried Okra from above
  • 4 or 5  tomatoes (diced)
  • 1/2 cup chickpea flour
  • 4 small cloves of garlic (minced)

Spices


  • 1/4 tsp Cumin Seeds
  • 1/2 tsp Salt
  • 1/4 tsp Turmeric powder
  • 1/4 tsp Red chili powder
  • 1 tsp Curry powder
  • 1 tsp Coriander powder
  • 1/2 tsp Mango powder
  • Small pinch Hing

Fried Okra Steps


  1. slice open the okra, and remove top
  2. add lemon juice, then salt, black pepper, and garlic herb
  3. air fry (or roast) the okra for 10-15 minutes (400f / 200c)

Toasted Chickpea Flour Steps


  1. dry roast chickpea flour - 3 or 4 minutes on a low flame (wait for the fragrance and then take off the flame and set aside)

Steps


  1. dry roast cumin seeds
  2. add tomatoes, lower to a medium flame, stir
  3. add spices, mix and continue to cook down for several minutes until the tomatoes are all broken down (3-5 minutes). Note - continue to press the tomatoes to help them break down, and add water if it’s needed
  4. add the toasted chickpea flour and stir completely.  You’ll have a very thick paste add a couple tbsp of water to thin it out, and continue to mix while it cooks on a very slow flame.  Cook for 2 minutes
  5. add dry roasted okra and stir it in.  Cook for 2 to 3 minutes, add a little water as needed to keep the right consistency
  6. top with cilantro
