Ingredients
- 1 medium head of cauliflower (chopped into florets)
- 3 small carrots (chopped)
- 1 cup green beans (raw 1 inch or so pieces)
- 1 cup green peas (raw)
- 5 small tomatoes sliced
- 3 small onion sliced
- 1/3 cup chopped cilantro
- 10 small garlic cloves
- 2 small pieces of ginger
spices
- 1/2 tsp cumin seeds
- 1/2 tsp salt
- 2 tsp coriander
- 2 tsp curry powder
- 1 small pinch hing
- 1/2 tsp red chili powder
- 1/2 tsp mango powder
- 1/2 tsp turmeric powder
Steps
- make a paste out of the garlic and ginger (using a mortar and pestle)
- dry roast the cumin seeds
- add onion slices, and water sauté for 2-3 minutes until browned (to bring out all the flavor)
- add ginger and garlic paste from step 1 and cook for 30-60 seconds (add a little water if needed)
- add your seasonings and a little water and stir with the onion mixture, cook down for 30-60 seconds
- add your veggies - cauliflower, carrots, peas, and green beans, mix, add 1/3 cup of water, mix thoroughly, and cook with lid on for just 2 or 3 minutes
- add tomatoes, mix, and cook with lid on for another 2 or 3 minutes
- add 1 more tsp of coriander powder sprinkled on the top, and add a small handful of cilantro
- pressure cook for a final 10 minutes
