Mix Vegetable Curry

Ingredients


  • 1 medium head of cauliflower (chopped into florets)
  • 3 small carrots (chopped)
  • 1 cup green beans (raw 1 inch or so pieces)
  • 1 cup green peas (raw)
  • 5 small tomatoes sliced
  • 3 small onion sliced
  • 1/3 cup chopped cilantro
  • 10 small garlic cloves
  • 2 small pieces of ginger

spices


  • 1/2 tsp cumin seeds
  • 1/2 tsp salt
  • 2 tsp coriander
  • 2 tsp curry powder
  • 1 small pinch hing
  • 1/2 tsp red chili powder
  • 1/2 tsp mango powder
  • 1/2 tsp turmeric powder

Steps


  1. make a paste out of the garlic and ginger (using a mortar and pestle)
  2. dry roast the cumin seeds
  3. add onion slices, and water sauté for 2-3 minutes until browned (to bring out all the flavor)
  4. add ginger and garlic paste from step 1 and cook for 30-60 seconds (add a little water if needed)
  5. add your seasonings and a little water and stir with the onion mixture, cook down for 30-60 seconds
  6. add your veggies - cauliflower, carrots, peas, and green beans, mix, add 1/3 cup of water, mix thoroughly, and cook with lid on for just 2 or 3 minutes
  7. add tomatoes, mix, and cook with lid on for another 2 or 3 minutes
  8. add 1 more tsp of coriander powder sprinkled on the top, and add a small handful of cilantro
  9. pressure cook for a final 10 minutes
