Ingredients
- 3 chopped tomatoes
- 1 chopped onion
- 4 garlic cloves minced
- 1 piece of ginger minced
- 10-12 kofta balls (recipe below)
- 1/2 tsp salt
- 1/4 tsp turmeric powder
- 1 tsp coriander
- 1 tsp curry
- 1/4 tsp red chili powder
- 1/4 tsp cumin seeds
- 1/4 tsp mango powder
- pinch of hing
Steps
- dry roast cumin seeds
- add chopped onion and a little water to water sauté (until the onions are fully cooked down and browned about 4 to 5 minutes)
- add ginger and garlic and cook for another 30 seconds
- add tomatoes and spices and cook down for 5+ minutes
- add 1/2 cup of water and kofta balls and cook for 2 minutes
- add a little more water (1/2 cup or less) and cook for 6-7 minutes until a lot of the water has evaporated
- top with cilantro

Kofta Balls
Ingredients
- 1 bottle gourd
- 3 heaping spoonful chickpea flour
- 1 onion (diced)
- 3 cloves garlic (minced)
- 1/2 tsp salt
- 1/4 tsp turmeric powder
- 1/2 tsp coriander
- 1/2 tsp curry
- 1/4 tsp red chili powder
- 1/4 tsp cumin powder
- 1/4 tsp mango powder
Steps
- peel and grate bottle gourd. Squeeze out the water
- combine all the ingredients into a bowl, and stir (add 2 spoonfuls of chickpea flour first, and then add 1 more after it’s mixed)
- mix well with your hand until it gets closer to a dough, and then make “meatballs” out of the dough
- air fry for 15 minutes at 350f or 180c
