Khichdi

Ingredients


  • 1/4 cup red (or pink) lentils
  • 1/4 cup split green lentils (moong dal)
  • 1/2 cup dry rice
  • 5 cups water - Note - this should be a 5 to 1 ratio for water vs the combination of lentils and rice
  • 2 tomatoes
  • 4-5 garlic cloves

Spices


  • 1/2 tsp salt
  • 1 tsp coriander powder
  • 1/4 tsp cumin seeds
  • 1/4 tsp turmeric powder

Steps


  1. wash the rice and lentils
  2. Make indian tomato gravy
    1. blend tomatoes and garlic into a tomato paste
    2. heat up the pressure cooker, and add cumin seeds - allow to dry roast, start to pop and brown
    3. add tomato paste, and stir up allowing to cook a little
    4. add spices (note, no mango powder, hing, or curry powder in this recipe), and cook down until the tomatoes reach a tomato paste consistency
  3. once the gravy is cooked down, add lentils, rice, and water to the pressure cooker, and mix up
  4. pressure cook until the lentils and rice are fully cooked (about 20 minutes of full pressure)
