Ingredients
- 7 potatoes (baked)
- 6 tomatoes
- 1 green chili
- Small piece of ginger
- Small amount of cilantro to top
Spice water mixture
- 1/3 cup of water
- 2 tsp coriander powder
- 1/2 tsp turmeric
- 1/4 tsp salt
- 1/4 tsp red pepper
- 1 pinch of hing
Spices
- 2 tsp Methi ki chatni (lonji) [Amazon]
- 1 and 1/2 tsp dried fenugreek leaves (Kasoori methi)
- 1/4 tsp cumin
Steps
- grind the chilis and ginger in a mortar and pestle (or a food processor)
- skin and crush the potatoes into small bites
- add spice water mixture together and put aside
- add whole tomatoes in a pot (it should just barely fit all the tomatoes in 1 layer), and add methi ki chatni. Add enough water to cover the tomatoes and boil for 7 minutes
- blend tomato mixture into a sauce
- dry roast cumin seeds, add add water spice mixture, tomato puree mixture, and ginger and chili paste. Cooked down for 3 or 4 minutes
- add 4 cups of water and continue to cook for 4 more minutes
- Add broken up potatoes, and get it to a boil. Once it starts to boil, bring it down to a simmer
- simmer for 7 minutes
- Add fenugreek leaves (and optionally 1/4 tsp garam masala) and cook for another minute
