Indian street food style potato curry


Ingredients

  • 7 potatoes (baked)
  • 6 tomatoes
  • 1 green chili
  • Small piece of ginger
  • Small amount of cilantro to top

Spice water mixture

  • 1/3 cup of water
  • 2 tsp coriander powder
  • 1/2 tsp turmeric
  • 1/4 tsp salt
  • 1/4 tsp red pepper
  • 1 pinch of hing

Spices

  • 2 tsp Methi ki chatni (lonji) [Amazon]
  • 1 and 1/2 tsp dried fenugreek leaves (Kasoori methi)
  • 1/4 tsp cumin

Steps

  1. grind the chilis and ginger in a mortar and pestle (or a food processor)
  2. skin and crush the potatoes into small bites
  3. add spice water mixture together and put aside
  4. add whole tomatoes in a pot (it should just barely fit all the tomatoes in 1 layer), and add methi ki chatni.  Add enough water to cover the tomatoes and boil for 7 minutes
  5. blend tomato mixture into a sauce
  6. dry roast cumin seeds, add add water spice mixture, tomato puree mixture, and ginger and chili paste.  Cooked down for 3 or 4 minutes
  7. add 4 cups of water and continue to cook for 4 more minutes
  8. Add broken up potatoes, and get it to a boil.  Once it starts to boil, bring it down to a simmer
  9. simmer for 7 minutes
  10. Add fenugreek leaves (and optionally 1/4 tsp garam masala) and cook for another minute
