Dal “Makhani”


Ingredients

  • 1/2 cup whole Black gram lentils (whole urad)
  • 1/2 cup Kidney beans
  • 1 tbsp Ginger and garlic paste
  • 2 chopped onions
  • 3 chopped tomatoes
  • Cashew paste (4 or 5 cashews with some water)

Spices

  • 2 tsp coriander powder
  • 1/4 tsp cumin powder
  • 1/4 tsp red chili powder
  • 1/4 tsp mango powder
  • 1/2 tsp salt
  • 1 tsp curry powder
  • Pinch of hing

Steps

  1. soak beans for 8+ hours (overnight), and boil til tender
  2. dry roast cumin seeds
  3. add onions and water sauté for 7+ minutes (until translucent and browned)
  4. add tomatoes and ginger/garlic paste and mix
  5. add spices and continue to cook down until the tomatoes have all broken down (5+ minutes) and the spice fragrance is released
  6. add the lentils (with the water) and mix
  7. cover and cook it down for about 30 minutes (pay attention to the thickness, and add water as needed) mixing every few minutes
  8. add the cashew paste
  9. top with cilantro
