Carrot Halwa (Gajar Halwa)

Ingredients


  • 1/4 cup cashews
  • 1/4 cup raisins
  • 1kg carrots
  • 250g dates
  • 3 cups almond milk (3 cups water and a handful of almonds blended)

Steps


  1. soak dates in some warm water for 20 minutes, then blend into a date paste
  2. dry roast carrots over a slow flame for 20 minutes, stirring often, when it starts to stick to the bottom it’s time to add the milk
  3. cook down the milk and carrots for another 10 minutes
  4. add date paste and stir for another several minutes
  5. add the cashews and raisins, and stir it together
