Cabbage, Peas, and Potatoes dry curry

Ingredients


  • 1 Small Cabbage (chopped)
  • 2 or 3 medium Potatoes (cubed)
  • 1 Cup Peas
  • 4 Tomatoes (diced)
  • small handful of cilantro
  • 3 cloves garlic
  • equal amount of fresh ginger

Spices


  • 1/4 tsp Red chili powder
  • 1/4 tsp turmeric
  • 2-3 tsp Curry Powder
  • 1/2 tsp Mango Powder (optional)
  • small pinch Asafoetida (optional)
  • 2 tsp Coriander Powder
  • 1/4 tsp Salt
  • 1/4 tsp Cumin Seeds

Steps


  1. Add potatoes and peas (if raw) to boiling water, 5-6 minutes until the potatoes are a little soft (don't need to be fully cooked)
  2. Crush ginger and garlic together to make a paste
  3. Heat a pan on a medium to low flame.  take cumin seeds and toast a little in a pan, when they start to crackle, add garlic and ginger paste.  Toast for about 30 to 45 seconds, stirring constantly
  4. Add tomatoes, and stir around and cook for a bit, then add remaining spices.  Cook down until most of the liquid from the tomatoes is gone.  This will cook down the spices really well and things will start smelling amazing :).  Stir throughout
  5. Add the cabbage, stir in, and cook through a bit.  Stir as needed
  6. Add potatoes and peas, stir it all together.  Stir every few minutes, and cover when not stirring, until it all seems good (about 4-5 minutes covered)
  7. Add cilantro and stir in and eat
