Ingredients
- Roast Okra from below
- 2 tomatoes
- 2 onions
Spices
- 1/4 tsp cumin seeds
- 1/2 tsp coriander powder
- 1/4 tsp turmeric powder
- 1/4 tsp salt
- 1/4 tsp curry powder
- pinch of hing
Steps
- prepare the roasted okra from below
- rough chop the tomatoes and onions, and put in a blender and blend them
- dry roast cumin seeds in hot pan
- add tomato paste and cook for a minute
- add remaining spices and cook for 6 or 7 minutes until tomatoes and onion turn into an almost dry paste
- add roasted okra and mix well and cook for another couple minutes
enjoy with roti, green sauce (guava sauce, cilantro sauce, etc up to you), and fresh tomato slices
Roasted Okra Recipe
Ingredients
- 300g okra
Spices
- 1 tsp coriander powder
- 1/4 tsp red chili powder
- 1/4 tsp turmeric powder
- 1/2 tsp curry powder
- 1/2 tsp mango powder
- 1/4 tsp salt (if your curry powder doesn't have salt)
Steps
- remove top and bottom of okra, and slice lengthwise down 1 side (not all the way through)
- mix all the dry spices
- pour the spices into the slit on the sides of the okra
- bake or air fry for 15-20 minutes at 450f (220c)
Enjoy - you can eat these as a quick snack, or use in the recipe above (or double the recipe and do both)
