Aloo Palak (Potato and Spinach Curry)

Ingredients


  • 4 potatoes (boiled or baked)
  • 2 onions (diced)
  • 2 tomatoes (diced)
  • 6 garlic cloves
  • small piece of ginger
  • 500 grams of spinach

Spices


  • 1 tsp Coriander powder
  • 1/2 tsp red chili powder - (Degi mirch)
  • 1/4 tsp Salt
  • 1/4 tsp Cumin Seeds
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Curry powder
  • small pinch Hing
  • 1/2 tsp Mango Powder

Steps


  1. dry roast cumin Seeds for 15 to 30 seconds (high flame)
  2. add onions and a small amount of water to water saute them for 4 minutes (medium flame)
  3. add ginger and garlic and continue to water saute for another minute or 2 (medium to slow flame)
  4. add tomatoes and stir them in (slow flame)
  5. add spices and cook for 4 or 5 minutes (continue to press the tomatoes as you go) or until the tomatoes are completely broken down and the spices let off a great smell.
  6. add 1/2 cup of water, mix, and add spinach cover for 6 minutes
  7. add potatoes and cook for another 2 minutes, most of the water should be gone
