Aloo Gobhi, Potato, Cauliflower, and Peas dry curry

Ingredients


  • 2 onions - diced
  • 6 garlic cloves - minced
  • 1 small piece of ginger - minced
  • small handful of cilantro - chopped
  • 4 chopped tomatoes
  • 1 to 2 cups of cauliflower
  • 2 potatoes - rough chopped
  • 1/2 cup of peas

Spices


  • 1/4 tsp cumin seeds
  • 1 tsp curry powder
  • 1/4 tsp red chili powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp salt
  • 2 tsp coriander powder
  • 1/4 tsp mango powder
  • 1/4 tsp coriander powder (in addition to above)

Steps


  1. boil the cauliflower, potato, and peas until they're almost done, drain and set aside
  2. add the cumin seeds to a hot pan, wait until they brown a little and then add the onions
  3. add a little water (1 or 2 tbsp) and water fry the onions until they start to brown
  4. add garlic cloves and minced ginger, water fry for a minute or 2, the onions should now be translucent
  5. add the tomatoes and cook them down for a minute
  6. add spices, and continue to cook the whole thing down for 5 to 9 minutes (add water if it feels like you need it, but keep it mostly dry)
  7. add pre boiled veggies, mix it all
  8. add extra coriander powder and mango powder.  Stir the whole thing around and let cook for 3 to 5 more minutes to finish cooking the preboiled veggies
  9. add cilantro to the top
